CHAR-GRILLED BAD HOMBRE FLATIRON STEAK

Adapted from the recipe in the 'A-BAR-A COOKBOOK'

Serves 6

4-5 lb Flank Steak or Skirt Steak

BAD HOMBRE SAUCE

Brush a heavy coat of BAD HOMBRE on both sides of the meat. Cover and refrigerate for a minimum of 2 hours before grilling.

Prepare a hot charcoal grill. Grill the steak on each side until the meat and marinade char lightly. Turning occasionally helps to cook evenly. Estimate about 10-15 minutes total cooking time, depending on desired degree of doneness. Keep in mind that both Flank and Skirt steak are best cooked medium or under, as it can become a bit chewy.

Off grill, allow the steak to rest, covered with foil, for 10 minutes to rest.

Carve the steak at a severe angle to the board in neat, thin slices. 

Serve the slices topped with a little BAD HOMBRE. ENJOY.

I smoked a pork shoulder and then covered the finished product in bad hombre. Unreal!
